What are some ideas beyond the traditional sausages and steak on the bbq?

  1. There’s nothing better than breakfast bbq style Kochie!
I love a couple of fried eggs, mushrooms and bacon straight from the grill.

Corn is another great one for the bbq, so is asparagus - soaked in butter and wrapped in tinfoil.

  2. Marinated skinless chicken pieces are great cooked on the barbie, with slices of sweet potato and white potato cooked on the side. Also pork and lamb chops. For dessert I cut a piece out of a banana and place grated chocolate in the hole, then wrap in foil and put onto the barbecue. When it is cooking the choc melts and goes through the banana. Delicious with ice-cream.
  3. My family many years ago got sick of having the “traditional” xmas lunch so now we BBQ seafood like prawns ect and even Bbq corn is great but fresh corn is the way to go.
In my family the men are no good at BBq’s since we have a all girl family and our partners are no good so we had no choice to excel in everything with practice
  4. Marinated chicken wings & breasts(slice breast lengthways to facilitate cooking) chicken, beef or pork skewers, marinated lamb chops. We cooked our whole Christmas lunch on the BBQ at my daughters in Canberra one year. Turkey, chickens & pork, along with roast vegies etc.The green vegies were done in an ordinary pot on the BBQ as well.
I live with my daughter & her family as of last year, so the only rule as regards the BBQ is that my son-in-law does the BBQ, we do the side dishes. Dan has 3 BBQ’s! He won’t part with any.
  5. #1 - For me, and I know this is a stigma for some, but SHRIMPS (lol prawns thank you) taste amazing on the barbie- especially loaded up with a puree of olive oil, chilli, garlic and lemon juice, I skewer them and peel the skin but leave the tails on for presentation.

#2 - Breakfast on the barbie- perfect holiday hangover cure. Cut some capsicums into 1 inch rings. Place on the barbie and crack an egg into the center of each. Some ultra thin strips of streaky bacon, and some thick slices of turkish brushed with olive oil , salt and rosemary on the grill side. Served with bbq sauce!

#3 Portuguese flattened chicken - brine the chix overnight in salt water. Then before you marinade, pour a kettle of hot water over. Pierce the skin with a prong. Marinade in red pepper pesto, garlic, chilli and lemon. Grill that on low heat until cooked.

  6. Minted Lamb Kebabs
  7. yes a breakfast is nice but i think some good marinated steak, snags and some ginger onions are great cooked up also with some bbqed vegitables . At our house when we have a bbq gathering the cooking and the bbq is left up to the men to handle whilst the girls stay inside and prepare the salads, drinks etc wilst of course gas bagging!
  8. PANCAKES ARE GREAT FOR A SNACK, EVERYONE LOVES THEM… OR I LOVE MUSHROOMS, ZUCCHINI, ONION,CAPSICUM AND POTATO ALL SLICED AND MIXED TOGETHER ON THE BBQ. YUMMO!
  9. Morning All,

My favourite is chicken breast fillets cubed and marinated in lime juice, white wine, garlic (fresh), good olive oil and cracked black pepper, marinate this for as long as possible. The taste is fresh and bitey and is always a winner at our barbies.

I hope that you all and your families have a really happy and safe Christmas and New Year. And I thank you for letting me be a part of your family.

    Love,

  10. Steak needs to only be turned once or twice to keep it tender. Men however grab a couple of beer with the mates, get talking & need to look busy & make it look like they know how to cook, so they stand there & turn it all the time, making it tough. Snags are a major part of the BBQ because it takes the attention of the steak as they get to turn the snags all the time instead. If you have snags as a part of the BBQ your steaks will instantly be better. And they tastes great too.
  11. I’d say nothing beats a Beer Can chicken with roasted corn. No recipe easier, just do a quick search, and so yummy. Highly recommended and everyone I’ve served it to always wants more!

  18. We like to cook various things on the BBQ. I make kebabs with marinated chicken or lamb, capsicum, pineapple pieces, mushrooms and cherry or grape tomatoes. They cook quickly and I fine that kids love them as well as adults.

Fish fillets, marinated cray fish and bone less chicken fillets also go really well on the BBQ.

  24. Nothing better than a leg of lamb, boned and butterflied and slowly cooked on the barbie with the hood down.
  25. I like a good piece of tasty fish, seasoned and wrapped up and left to marinate/steam on the bbq. I take 2 nice big pieces of tassie salmon, lay each on a piece of oiled alfoil. I then dress with a mixture of soy sauce, sweet chilli sauce, a tsp of garlic and salt and pepper to taste. You then wrap each piece up. You can then either put them in a steamer and cooked it that way, or you can throw it on the bbq to cook, usually for about 20 min. It’s delicious!
  26. pork ribs are great on the bbq but do make a bit of a mess. also zuchinis and/or mushrooms are great sliced and barbecued with oil and garlic. and last but not least, hot chips are really good on the wok burner
  27. Some green prawns with fountain chilli sauce over the top off them till they cook though within the sauce…
  28. Hi Kochie,
I use the wok burner on my BBQ or anyone else’s for that matter, to cook my Garlic Prawns.
I also cook fried rice in the wok, and then stuff a Blue Bone Groper or Pink snapper with it and cook that in foil on the BBQ. yum yum!!
  29. We all gather at my mums house for Christmas breakfast which I always cook since I was about 12 (I’m now 29). I make up a huge batch of pancakes cooked on the BBQ as it is heaps quicker and serve them with yummy maple syrup, jam and cream and lemon and sugar!
